Salad with Chickpeas and tuna

Preparation time: 12 hours
Boiling time: 1 hour
MATERIALS – for 4 persons

500g chickpeas soaked from the previous evening
300g green salad of the season
200g tuna in water
2 spring onions, finely chopped
1 onion cut into thin slices
2 grated carrots

For the sauce:
Juice of an orange, lemon, lime, tangerine
8 tablespoons olive oil
1 spicy mustard
1 tablespoon honey
Salt and pepper

  1. Strain the chickpeas and boil it in plenty of water, skimming it at the beginning and lower the intensity of the heat until it becomes tender.
  2. In a large bowl, add the chickpeas cold, add the salad, add the onion, mix it all well and then add the carrots and tuna.
  3. In a jar with a lid, add all the ingredients for the salad to mix well to homogenize and pour over the salad.
Tip: we can add the zest of an orange during boiling and a laurel leaf also accompany our salad with 1 tablespoon yogurt and dried rustic bread
