Salad with Beans, white cheeses and peppers of Florina

MATERIALS – for 4 persons

500g boiled beans
1 jar of florina pepper baked
1 onion cut into thin slices
½ bunch parsley finely chopped
200gr. grated white feta cheeses, anthotyro cheese, manouri cheese
2 tablespoons katiki

For the sauce:
8 tablespoons olive oil
1 tbsp spicy mustard
Juice from an orange
Juice of a lemon
Juice from a grapefruit
1 tablespoon honey
Salt and pepper

  1. Cut the peppers into thin slices the onion into thin slices the parsley finely chop it.
  2. In a deep bowl mix all the salad ingredients along with the boiled beans well.
  3. With the help of a masher, prepare the sauce by homogenizing all the ingredients together, pour over the salad and leave in the refrigerator for about 1 hour to unite the aromas and flavors.
  4. Divide the salad into 4 small bowls and serve.
Tip: you can add to the salad 1 carrot finely chopped and replace the parsley with a bunch of chopped myronia
