Lentils with long grain rice, onion pickles and broccoli

INGREDIENTS

400gr. fine lentils AGRIFARM

200g long grain rice AGRIFARM

1 head of broccoli in small bundles

2 tablespoon(s) finely chopped chives

 

For the onion pickles:

1 onion thinly sliced

1tbsp salt

200g white vinegar

For the sauce:

6tbsp olive oil

2tbsp white vinegar

1 tbsp spices (cumin, curry, ginger)

1 tsp mustard

Salt and pepper

Instructions:

Boil the rice in a small saucepan and set it aside to cool. Prepare the pickles by putting the onion with the salt and vinegar in a bowl. Stir and leave for 30 minutes. Boil the lentils to soften without melting. Then boil the broccoli in salted water for 3-5 minutes. Prepare the sauce by mixing all its ingredients well. Then take a large bowl and add the rice, lentils, broccoli and sauce you have prepared. Mix well. Drain the onion pickles and add them to the top of the plate while serving.
