Medium beans with sausage

INGREDIENTS
500gr. Medium beans AGRIFARM soaked for 6 hours
1 sprig celery finely chopped
1 carrot finely chopped
1 onion finely chopped
1 clove garlic
Juice from an orange
6 tablespoon(s) olive oil
A vegetable broth cube
2 tablespoon(s) tomato paste
100ml dry red wine
200g spicy sliced sausage
Salt and pepper
Instructions:
In a pot add the beans with water to cover them, boil for 10 minutes, and strain. Transfer the beans back to the pot, add all the rest of the ingredients except the sausage and orange juice, mix, deglaze the pan with the wine, and cover with water to boil. Let them come to a boil and reduce the intensity of the heat by half, boil for about 1 hour until the beans are tender. In a frying pan, add the sausage to burn slightly on both sides, deglaze the pan with the orange juice, and add it to the pot with the beans. Continue cooking for 20 more minutes, season with salt and pepper, stir lightly and leave the food off heat for 20 minutes before serving.
Tip:
Serve with finely chopped fresh basil for a hint of freshness.
