Fava with grilled cherry tomatoes

INGREDIENTS

500gr. Fava cut from vetch AGRIFARM

150g cherry tomatoes

10g coarse salt

2 tablespoon(s) balsamic vinegar

3 sprigs fresh thyme, finely chopped

3 tablespoon(s) olive oil

Instuctions:

We check the fava if contains hard particles and we clean it out, then put it in a pot over low heat with water covering it. At the first boil it will foam and with a slotted spoon remove the foam. Continue boiling adding salt and the rest of the ingredients, boil over low heat and stir very carefully because the fava bubbles when boiling and you may burn. Stir until it thickens well. You may need a little more water when boiling. Wash the cherry tomatoes well and put them in a baking pan covered with grease proof paper. Add the rest of the ingredients and mix well.  Bake in a preheated oven at 80οC for 40 minutes.  Let them cool, put them on top of fava, and serve.

Tip:

You can add a little oregano to serve for more flavor and intense flavor.
