Giant beans in the oven with “kavourma” deli meat and red cabbage

INGREDIENTS

500gr. Giant beans AGRIFARM soaked for 6 hours

200gr. red cabbage

200g kavourma (traditional deli meat from Northern Greece)

1 carrot, finely chopped

1 sprig celery, finely chopped

1 onion sliced

2 garlic cloves,thinly sliced

1 tablespoon(s) tomato paste

1 bay leaf

3 allspice grains

1 liter vegetable broth

8tbsp olive oil

Salt and pepper

Instructions:

In a pot add the giant beans and boil them for 10 minutes. Drain and add the oil to the pot along with the vegetables except the cabbage to fry for 2 minutes. Add the giant beans, mix and add the tomato paste, the broth and spices. Boil over medium heat for 1 hour.

Transfer the giant beans to a baking pan, add the kavourma deli meat into pieces, the cabbage coarsely chopped, stir lightly and continue cooking in a preheated oven at 180ο C for 30 more minutes.

Serve with finely chopped parsley

 

Tip:

you can add 1 teaspoon hot chili flakes to the food for a spicy taste
