Raw rice with pine nuts, raisins, orange and carrot

INGREDIENTS

500gr. Raw Rice AGRIFARM well washed

2tbsp butter

1 onion, finely chopped

50g black raisins

2 carrots finely chopped

Zest of 1 orange

50g pine nuts

About 1 liter of chicken broth

Salt and freshly ground pepper

Instructions:

Put the rice in a bowl and cover with water for 30 minutes.

In a small deep saucepan, add the butter to melt, add the onion to fry for 1 minute. Drain the rice, add it to the pot along with the pine nuts to fry for 1 minute, and add the chicken broth. Add the raisins, carrot, orange zest, salt and pepper and boil over medium heat. Cover the rice until small blisters start to appear. This means that the rice has soaked in the broth. Turn off the heat and cover the pot with a kitchen towel. Let the towel pull out the moisture for about 30 minutes in order to have a crispy rice.

Tip:

You can add 1 star anise when boiling and remove before serving for more aroma
